Why 62 centilitres

The clavelin is the bottle of Vin Jaune, and of Vin Jaune alone. Its size tells the story of the years spent in barrel.

For six years and three months, Vin Jaune slowly evaporates through the wood. Part of the volume disappears: the angels' share.

It is said that one litre of wine placed in barrel emerges as roughly 62 centilitres. The bottle took that measure. It is called the clavelin, squat and broad-shouldered, and it is reserved for Vin Jaune.

To open a clavelin is to drink what has withstood time. Every glass holds a little of those years in the cellar.
